An easy quick simple to make economy meal. Serve with buttered baguette, rice or tortilla wraps. A spoon of Greek yogurt on top goes down a treat

Preparation time: 10 minutes   Quantity: Serves 6   Cooking time: 15 minutes

Ingredients

3 tins of beans - i.e. - borlotti, canalini, kidney, butter, black eye etc. or 600g dried beans, soaked and cooked until soft

1 tablespoon oil
1 onion - small diced
1 stick celery - small diced (op)
3 cloves garlic - crushed
2 cm ginger - grated (op)
1 teaspoon ground chilli
1 teaspoon ground cumin
1 tin tomatoes - chopped
150 ml water or veggie stock
1 tablespoon light soya sauce
2 tablespoons tomato puree
seasoning
1/2 bunch chopped coriander (optional)

Method

  • Drain and wash the beans, set aside
  • Heat the oil in a large pan
  • Cook the onion and celery until soft
  • Add the garlic, ginger and spices cooking for a minute to release the flavours
  • Stir in the beans and warm through for a few minutes
  • Add the tomatoes, water and soya
  • Simmer for 5 -10 minutes
  • Thicken with the puree
  • Season to taste
  • Sprinkle in the coriander before serving
