Breaded Chicken Pieces / Home made Chicken Nuggets
When I make fresh chicken pieces (I hate the word nugget - chickens simply don’t have nuggets and fish don’t have fingers!) I make a load up and freeze the extra ones. This recipe is much easier shared - one on the flour and eggs and one on the crumbs - it saves breading your fingers (now, we have fingers!).
Preparation time: 20 minutes Quantity: 8 - 9 nuggets Cooking time: 12 minutes
Ingredients
1 chicken breast - chunky diced
Flour, Egg and Bread crumb / Pane Mix -
60g / 2 oz flour - seasoned
2 whole eggs - beaten
150g / 6 oz natural breadcrumbs
oil to fry - or dry bake
Method
- Get the pane mix ready, that’s the flour in one bowl, the egg in another and the crumbs in the 3rd
- Get the chicken ready to pane
- Dip in to seasoned flour
- Then dip in to the eggs, shake of excess mix
- Then dip in to the crumbs till well coated pressing them in gently
- Shake or excess crumbs and deep fry approx. 180-190c –till golden or for a healthier version bake 220*c /gas 7 for - 10 - 12 minutes
