Stem Ginger Cake

This is gooey, sticky, gingery and moist with a delicious flavour.

Preparation time: 20 minutes   Quantity: Serves 12 - 14   Cooking time: 1 hour

Ingredients

225g/ 9 oz self raising flour
1 teaspoon bicarbonate of soda
1 tablespoon ground ginger
1 teaspoon ground cinnamon
1 teaspoon mixed spice
125g/ 5 oz butter -diced
125g/ 5 oz dark brown sugar
125g/ 5 oz black treacle
125g/ 5 oz golden syrup
1 tablespoon stem ginger syrup
250 ml/1/2 pint milk
1 large egg
90g/ 3 oz chopped stem ginger

Method

  • Sift the flour and add all spices and soda
  • Rub in butter
  • Meanwhile boil butter, treacle, syrups and milk
  • Add the wet mix to the dry flour mix and beat in
  • Beat in the egg and add the stem ginger pieces
  • Spoon in to a greased cake tin
  • Bake in a preset oven gas 4/180*c for around 1 hour or until cooked


Recommended cake tin- approx. size 9 – 10 inch
