Scottish Ginger Cake

A really rich, moist, dark - ginger cake.
Serve a slice warm with stem ginger syrup.

Preparation time: 15 minutes   Quantity: Serves 10   Cooking time: 2 - 2&1/2 hours

Ingredients

8 oz/230g plain flour (sieved)
1/2 tsp bicarbonate of soda
1/2 tsp baking powder
1 tsp ground ginger
2 tsp mixed spice
2 oz/50g oats
3 oz/80g sultanas
3 oz/80g mixed peel
2 oz/50g chopped stem ginger
1 tablespoons of the syrup from the ginger
4 oz/100g black treacle
4 oz/100g golden syrup
6 oz/180g butter
2 oz/50g dark brown sugar
5 fl oz/150 ml/ 1/4 pint milk
2 medium eggs

Method

  • In a big mixing bowl add the sieved flour, oats, fruits and ginger
  • Melt the butter, syrups, treacle and sugar in a saucepan
  • Add the wet to the dry and mix
  • Beat in the eggs
  • Pour in a greased tin (7-9 inch)
  • Bake for 2 –2&1/2 hours, till a knife or skewers comes out of the middle- dry
  • Cool and serve
  • Try serving with whiskey cream
