This is the perfect fruit cake. Try serving hot with a Whisky Custard or Bourbon Cream.

Preparation time: 15 minutes   Quantity: Makes 12 - 16 slices   Cooking time: 2 &1/2 - 3 hours

Ingredients

8 oz/ 225g salted butter
8 oz/ 225g dark brown sugar
4 oz/ 100g raisins
4 oz/ 100g sultanas
4 oz/ 100g currants
4 oz/ 100g mixed peel
10 oz/ 300g plain flour (sieved)
2 oz/ 50g ground almonds
4 medium eggs
1 orange zest
1 lemon zest
3 tablespoons fresh orange juice

Method

  • Add the fruits to the flour and ground almonds- mix and set aside
  • Cream the butter and sugar = beat until smooth, creamy and lighter
  • Gradually beat in the eggs, till smooth
  • Add the flour mix, mix together
  • Add the zest and juice
  • Pour in to a 8-9 inch tin
  • Smooth the top and decorate with neat rows of whole almonds
  • Bake for 2&1/2 –3 hours or until cooked, a skewer will come out clean when prodded in the middle
  • Optional = pour on 1 measure (30 ml) of Whiskey
  • Leave to cool
