Hot Plum and Cinnamon Pudding

Yum, hot plums in a wholemeal cake - warming, especially served with fresh custard sauce or serve warm with butterscotch sauce and clotted cream -mmm, bad.

Preparation time: 15 - 20 minutes   Quantity: Serves 6 -8   Cooking time: 40-50 minutes

Ingredients

100g/ 4 oz soft butter
75g/ 3 oz light brown sugar
2 large eggs
200g/ 8 oz self raising wholemeal flour
1-2 teaspoon ground cinnamon
450g/ 16 oz plums -stoned and sliced

Method

  • Cream the butter and sugar together till creamier
  • Add the eggs in slowly beating all the time till well incorporated
  • Stir in the flour and cinnamon
  • Stir in the plums
  • Pour in to a greased tin
  • Bake in a preheated oven Gas 5/180*c/380*f - for 40-50 minutes till firm
  • Serve warm with Fresh Custard Sauce


Recommended cake tin- approx. size 8 - 9 inch tin or a deep ovenproof serving dish 7 – 8 inch
