Herring in Oatmeal

Ingredients

1 large herring - filleted
1 tablespoon flour
1 egg - beaten any size
3 tablespoons oatmeal or fine porridge oats
seasoning

Method

  • Keep the skin on the Herring
  • Dip in the flour, shake of excess
  • Dip in the beaten egg, till well coated, shake of excess
  • Press in to a plate of oatmeal, coating well by pushing the oatmeal gently in to the fish, until well coated
  • Shake of excess
  • Heat the oil in a pan
  • Shallow fry the herring, turning when golden brown and cook until golden and crisp
