Strawberry, Mint Yogurt Ice
This is a frozen strawberry flavoured yogurt dessert, quick and easy to make and the good thing is you can make up a load in advance, get out of the freezer when needed and serve.
Preparation time: 10 minutes Quantity: Serves 8 Cooking time: freeze overnight
Ingredients
450g/1 lb fresh strawberries
450g- 500g /1 pot Greek yogurt
10 or so mint leaves
60g/ 2 oz caster sugar
Method
- Whizz/liquidize up the de-hulled, chopped strawberry’s with the sugar to a puree
- Meanwhile chop the mint
- Mix everything together
- Spoon evenly in to 8 cups/ramekins/pots -that have been lined with cling film
- Freeze for 3 hours or overnight
- Take out of the freezer 15-20 minutes before serving
