Greek Style Sausages

A vegetarian sausage, with all the lovely Greek ingredient favourites.

Preparation time: 30 - 40 minutes   Quantity: Makes 8 - 10 portions   Cooking time: 10 - 15 minutes

Ingredients

200g crumbled feta cheese
200g lightly cooked fresh chopped spinach (dry)
1 clove crushed garlic
1/4 teaspoon fresh grated nutmeg
50 ml/1 fl oz double cream
120g fresh white breadcrumbs
1 teaspoon fresh marjoram (op)
1 teaspoon fresh oregano
1 egg
1/3 teaspoon salt
10 twists black pepper

Method

  • Mix all the ingredients
  • Stuff in to vegetarian skins or roll and cover in breadcrumbs
  • To breadcrumb – 1st coat in flour, 2nd coat in beaten egg and 3 rd coat in fresh breadcrumbs
  • Cook by baking in the oven or deep frying
  • Or roll individual sausage shapes in clingfilm and stem till cooked/ firm
