Smoked Haddock and Spinach Gratin

A quick an easy supper dish full of goodness and ready quicker than the ping of the microwave after shoving in a plastic ready meal. You could make this dish without spinach or replace with cooked sliced new potatoes or cooked shredded cabbage or sliced tomatoes or even sweet potato mash

Preparation time: 5 minutes   Quantity: Serves 1   Cooking time: 8 -12 minutes

Ingredients

60g /2 oz cooked spinach
seasoning
touch nutmeg
125g / 5 oz smoked haddock
90g / 3 oz creme fraiche
60g/ 2 oz grated gruyere cheese (or other hard cheese)

Method

  • If using fresh spinach cook in a little butter to wilt, season with salt, pepper and nutmeg
  • If using frozen squeeze out excess water and season as above
  • Warm the spinach slightly if frozen
  • Place in a mound on to an ovenproof dish or straight on to a plate
  • Slice the haddock in to very thin slices and place all over the spinach in a neat-ish pile
  • Season with a touch of salt and pepper
  • With a spoon spread the creme fraiche all over the mound
  • Sprinkle with the grated cheese
  • Grill under a medium grill till melted, golden and bubbling all over
