Penne Pasta in Tomato Sauce
This is a really basic tomato sauce which can be used as a pizza topping, with pasta or as a sauce with your dinner. Pitta bread is a good base for easy pizzas.

Ingredients
Tomato Sauce -
1 tin plum tomato
1 tin of water
1 onion - peeled and chopped
1 stick celery - chopped
2 cloves garlic - sliced
2 carrots - peeled and chopped
1 red pepper - chopped
¼ tub tomato puree (3 tablespoons)
salt and pepper
1 tablespoon fresh herbs - chopped
Pasta -
12 oz / 300g penne pasta
2 teaspoons olive oil
touch salt
Grated cheese to serve (optional)
Method
Make the tomato Sauce -
- Put all ingredients a large pot except the puree and simmer for 30 minutes until all soft
- Blend or liquidize
- Add the puree, this will add colour, thickness and shine
- Taste and season
- Meanwhile bring a big pan of cold water to the boil with the oil and salt
- When rapidly boiling add the pasta, stir a couple of times and cook as per instructions (minus a minute) on the back approx. 8 - 10 minutes
- Drain stir in to the tomato sauce
- Serve with a sprinkle of grated cheese (op)
