Mexican Avocado Salad

A simple refreshing salad perfect as part of a Mexican feast or serve with chilli and sour cream to stuff in to tortillas. For a healthy lunch toss this salad with some torn cos lettuce, rocket and peeled apple slices.

Preparation time: 15 minutes   Quantity: Serves 4 as a side dish   Cooking time: no cooking required

Ingredients

1 lime - grated rind and juice
1 teaspoon light brown sugar
1 tablespoon olive oil
1 tablespoon coriander -chopped
1 green chilli -finely chopped
2 ripe avocados
seasoning

Method

  • Mix the zest, juice, sugar, herb, oil and chilli together
  • Taste and season
  • Cut the avocados in two equal halves, remove the stone
  • Peel of the skin
  • Slice in chunky slices
  • Place on a plate and dress with the lime dressing
