Cooking in Foil
As the French say “en Papiette” -cooking in a bag. But the thing is it’s just so simple, tasty, quick and visually impressive plus the added bonus of-it saves on the washing up.
Preparation time: 5 minutes Quantity: Fill 1 bag per portion Cooking time: 20-30 minutes
Ingredients
1 square of tin foil.
1 portion of fish, chicken, pork or turkey. (120-180g)
1 teaspoon olive oil
1 teaspoon alcohol, wine, juice, water, stock etc.
30-50g sliced onions, assorted vegetables-try leeks, mushrooms, cooked potatoes, courgettes etc.)
1 clove crushed garlic
1 squeeze citrus juice

Method
- Place a square of foil and a square of greaseproof paper down on a bench, fill with sliced vegetables, par boiled potatoes, a piece of turkey, chicken, pork or fish, drizzle with a little olive oil and a squeeze of lemon season add fresh garlic, ginger and chilli (op)
- Fold over sides like a Cornish pasty –don’t let any air in so the food steams in the oven but don’t seal too tightly
- Cook in a medium oven on the top shelf for 30 minutes approximately Gas6 / 220*c / 450*f
