As an alternative you could toss in small slices of omelette in to vegetable fried rice.
Use brown rice for a healthier version

Preparation time: 5 minutes   Quantity: Serves 4   Cooking time: 10-12 minutes

Ingredients

120g/ 4 oz of assorted finely chopped vegetables like carrot, pea, garlic and ginger (but you can use anything)
250g/ 8 oz of cooked plain rice
1 large egg
seasoning

Method

  • Wok fry in oil the assortment of finely chopped vegetables
  • Add cooked plain rice, cook till warm
  • Crack egg in a bowl and pour in to the centre of the rice
  • Sir-fry till the egg is cooked and well coated in the mix. (3-4 minutes)
  • Serve with a sprinkling of herbs or crushed nuts
