A fantastically healthy dish packed full of nutrition. Try making a fresh Tuna Nicoise by topping the salad with a lightly char-grilled piece of fresh Tuna steak.

Preparation time: 10 minutes   Quantity: Serves 2   Cooking time: just cooking of potatoes and beans

Ingredients

10-15 cooked French beans
2 boiled egg cut into quarters
4-5 cooked new potatoes cut into quarters
1/2 red onion sliced
3-4 cherry plum tomatoes - quartered (op)
1 tablespoon black olives
1/2 tin/60g tuna in olive oil
salt and pepper
1 tablespoon oil from tin of tuna
2 teaspoons wine vinegar
1/4 fresh lemon juice

Method

  • Toss all ingredients in a bowl
  • Season and dress with a little oil, a squeeze of fresh lemon juice and vinegar
