A basic way to cook rice with the added nutrients of your favourite vegetables- easy one pot cooking, everything cooks together and no flavour is lost.
Use any vegetables you like, I always include garlic and onion as a base for taste, then what ever I’ve got sitting around.

Preparation time: 10 minutes   Quantity: Serves 4   Cooking time: 23 minutes

Ingredients

200g/ 8 oz easy cook white or brown rice
200g/ 8 oz small-diced vegetables (fresh or frozen)
200g/ 8 oz water or stock

Or equal quantities of everything use 2 oz/ 60g of rice per person

Method

  • Boil rice and vegetables in the water/stock for 3 mins and simmer for 20 mins.
  • Keep an eye on it after 15 mins it may need a little more water to stop it from burning
  • Cook till all the water is absorbed and the rice soft
  • Season to taste
