White Chocolate Chip Brownies

Try coconut brownies just replace the choc chips for coconut and for an even coconut -ie brownie add 3 tablespoons of coconut milk to the melted chocolate

Preparation time: 20 minutes   Quantity: Served 6-8   Cooking time: 40 minutes

Ingredients

180g/ 6 oz butter- softened
300g/ 10 oz / 2 bars dark chocolate
300g/ 10 oz caster sugar
3 large eggs
100g/ 4 oz plain flour-sifted
200g/ 8 oz white chocolate chips

Method

  • Melt the butter and the chopped chocolate over a bain marie (in a bowl over simmering water)
  • Stir when melted
  • Meanwhile whisk the eggs and the sugar together till frothy and paler
  • Whisk the two together
  • Fold in the flour and the choc chips
  • Spoon in to a greased tray
  • Bake in a preheated oven gas 6/200*c on the middle shelf for 30-40 minutes or till cooked
