Chocolate, Coffee and Bailey Cups

A delicious creamy mousse set in Espresso cups. Not suitable for pregnant women, the elderly or young children due to raw egg.

Preparation time: 20 minutes   Quantity: Serves 6   Cooking time: 5 minutes plus setting time

Ingredients

150g/ 1 bar dark chocolate -grated
150 ml double cream
100 ml milk
50 ml baileys/Irish cream
50 ml strong coffee/espresso
1 large egg -organic

Baileys Cream -
50 ml double cream- whisked
1 measure/30 ml Baileys

Method

  • Boil the cream and the milk - when very hot
  • Pour on to the grated chocolate in a bowl
  • Whisk till the chocolate is melted
  • Whisk in the egg
  • Whisk in the coffee and Irish cream
  • Pour in to 6 espresso cups
  • Set in the fridge, for several hours or preferably overnight
  • Serve with the Baileys Cream spooned on top

(stir the whipped cream in to the Baileys)
