White Chocolate Meringue’s
Omit the white chocolate for plain meringues, make individual ones or a large pavlova sized one. Fill with whipped cream and melted chocolate or an array of fresh fruits.
Preparation time: 20 minutes Quantity: Serves 4 Cooking time: 1 & 1/2 hours
Ingredients
4 large egg whites
250g/ 8 oz caster sugar
1 teaspoon white wine or cider vinegar
1 teaspoon cornflour
few drops vanilla extract
60g/ 2 oz grated white chocolate
Method
- Whip the egg whites with 1/2 the sugar, to soft peeks
- Whisk in the rest of the ingredients (gently)
- Line a greased tin with lightly greased greaseproof paper
- Spoon on 8 circles of mix, roughly 6-8 cm wide
- Bake in a preheated oven gas 1/100*c/200*f for 1&1/4 - 1&1/2 hours, till dried
- Cool
