Double Chocolate Rum and Raisin Brownies

Serve warm with a double scoop of vanilla ice-cream.

Preparation time: 20 minutes   Quantity: Serves 10 - 12   Cooking time: 40 minutes

Ingredients

100g /4 oz raisins
2-3 tablespoons dark Rum
180g/ 6 oz butter- softened
300g/ 10 oz / 2 bars dark chocolate
300g/ 10 oz caster sugar
3 large eggs
60g/ 2 oz white chocolate chips or chopped
100g/ 4 oz plain flour-sifted
1 tablespoon cocoa powder

Method

  • Soak the raisins in the rum -set aside
  • Melt the butter and the chopped chocolate over a bain marie (in a bowl over simmering water)
  • Stir when melted
  • Meanwhile whisk the eggs and the sugar together till frothy and paler
  • Whisk the two together
  • Stir in the rum and raisins and white chocolate chips
  • Fold in the flour and cocoa
  • Spoon in to a greased tray
  • Bake in a preheated oven gas 6/200*c on the middle shelf for 30-40 minutes or till cooked
