White Chocolate Egg-Nog Cheesecake

A dessert using the ingredients from an Egg-Nog (see CookeryClub cocktail recipes) with the added bonus of white chocolate.

Preparation time: 30 minutes   Quantity: Makes 8-10 portions   Cooking time: 1 hour

Ingredients

Base -
200g/ 8 oz digestive biscuits -crumbed
50g/ 2 oz butter

Filling -
200g/ 8 oz cream cheese
1/4 pint/ 150 ml whipping or double cream
150g/ 6 oz caster sugar
1 teaspoon vanilla extract
3 medium eggs
2 medium egg yolks
2 tablespoons dark rum
1 tablespoon Brandy
100g/bar white chocolate
1/8th freshly grated nutmeg

Method

  • Melt the butter and stir in the crumbed biscuits
  • Press in to a 8-9 inch tin or suitable dish
  • Chill
  • Melt the chocolate in short bursts in the microwave
  • Meanwhile beat the cream cheese, with the cream, sugar and vanilla
  • Stir in the rum, brandy and melted white chocolate
  • Then mix in the eggs, gradually, stirring all the time
  • Pour over the base
  • Grate on the fresh nutmeg
  • Bake in a pre heated oven -gas 5/200*c/400*f for 40-50 minutes or until firm to the touch
  • Cool -then serve
