Chocolate, Date and Pecan Torte

A light cake - like - torte.
Serve with a blob of something yummy like mascarpone, Greek yogurt, clotted cream, ice-cream etc

Preparation time: 20 - 30 minutes   Quantity: Makes 8 portions   Cooking time: 40 - 45 minutes

Ingredients

125g chopped dried dates
1 tablespoon boiled water
1 tablespoons rum
4 egg whites
150g caster sugar
125g crushed pecan nuts
200g grated/chopped dark chocolate (70%cocoa)

Method

  • Pour the boiled water on to the chopped dates, add the rum and leave aside –to cool slightly
  • Whip up the egg whites with 1/2 of the sugar- till soft peeks, add the remaining sugar and whip in
  • Fold in all the ingredients
  • Pour in to a well-greased 9-inch tin
  • Bake in a pre heated oven Gas4/180*c/350*f for 40-45 minutes
  • Leave to cool
