Real Chocolate Chewy Brownies

The perfect Brownie, crispy on top, dark and gooey in the middle with a really rich chocolate taste.
The perfect dessert with vanilla pod ice cream and a touch of hot fudge sauce.

Preparation time: 20 minutes   Quantity: Makes 12 portions   Cooking time: 25 - 30 minutes

Ingredients

9 oz /200g butter
16 oz/ 1lb/450g light brown sugar (or caster)
1 x 100g bar dark chocolate (70% cocoa) chopped or grated
2 oz/ 50g cocoa powder
4 medium eggs (beaten)
4 oz/ 100g self raising flour sieved
1/2 teaspoon vanilla extract

Method

  • In a saucepan gently heat the chopped butter, sugar, vanilla, chopped chocolate and cocoa
  • Cool for 5 minutes
  • Whisk in the beaten eggs
  • Stir in the sieved flour
  • Pour in to a 8-9 inch tin
  • Bake 25-30 minutes –till firm around the sides, but soft in the middle- they might even look like they are not cooked- but they are!!
  • Cool, cut and serve –these are gooey and crunchy and will not come out of the tin neatly
