A moist little number, perfect served with a fig compote. For a varied flavour replace the lime with orange, lemon or even grapefruit.

Ingredients

120g/ 4 oz butter- softened
150g/ 5 oz caster sugar
2 medium eggs
90g/ 3 oz ground almonds
60g/ 3 oz self raising flour
1 lime zest (only- no juice)
1 tablespoon sliced almonds for top (op)

Method

  • Cream the butter and sugar together till soft and creamy
  • Beat in the eggs, gradually pouring but beating all the time
  • Stir in the zest
  • Stir in the flour and almonds - quickly till just mixed
  • Spoon in to a greased loaf tin
  • Sprinkle with the sliced almonds
  • Bake in a preheated oven gas 4/180*c for 30-40 minutes or until a skewer comes out of the cake clean
