Oat and Raisin Cookie’s

Another good, can’t fail cookie recipe.
Turn in to a dessert by sandwiching two cookies together with ice-cream and coating in a thin layer of chocolate - get the chocolate fountain out of the cupboard from Christmas

Preparation time: 10 minutes   Quantity: Makes 15 small ones   Cooking time: 8 - 10 minutes

Ingredients

5 oz /125g butter
3 oz /75g caster sugar
3 oz /75g light brown sugar
1 /2 teaspoon vanilla extract
1 medium egg
5 oz /125g plain flour
1/2 teaspoon bicarbonate of soda
5 oz /125g oats
5 oz / 125g raisins

Method

  • Cream butter and sugar’s together till soft and paler
  • Beat in the egg
  • Mix in the all else
  • Drop teaspoons of mix on to a greased baking sheet
  • Bake for 8-10 minutes or until golden brown
  • Cookies will be crispy on the outside but still chewy in the middle
  • Cool slightly- then eat.!!
