Ginger Biscuits
This mix can be rolled in to a sausage shape, wrapped in cling film and stored in the fridge till needed- just cut of a thin slice and bake.
Preparation time: 20 minutes Quantity: Makes 20 or so small biscuits Cooking time: 10 minutes
Ingredients
300g/ 10 oz plain flour
1/2 teaspoon ground ginger
1/4 teaspoon bicarbonate of soda
200g/ 8 oz caster sugar
100g/ 4 oz butter -softened
1 small egg yolk
1/2 tablespoon golden syrup
1 teaspoon grated peeled ginger -fresh
2 teaspoon sour cream / milk or yogurt
Method
- Rub the diced butter in to the flour, till the mix looks like breadcrumbs
- Add the ginger, bicarbonate and sugar -mix in
- Add all else and mix
- Spoon ballfuls on to a greased tray, no need
to flatten
- Bake in a preheated oven gas 6-7/220*c for 8-10 minutes or until, firm and golden
