Iced Lime Tea Cake
Preparation time: 15 minutes Quantity: Makes 6-8 slices Cooking time: 40 minutes
Ingredients
120g/ 4 oz butter -softened
60g/ 2 oz caster sugar
2 medium eggs
3 tablespoons lime curd or lime marmalade
2 fresh limes -zest and juice
180g/ 6 oz self raising flour
Icing -
90g/ 3 oz icing sugar
1 tablespoon fresh lime juice
Method
- Beat together the butter and sugar, till soft and well incorporated
- Slowly add the beaten egg, beating all the time
- Fold in the flour
- Add the lime, zest, curd and juice
- Spoon in to a greased loaf tin
- Bake in a preheated oven gas 3/170*c for
35-40 minutes or until cooked
Cool
To make the icing -beat together the icing sugar and lime juice, spread on the top (if too thin add a little more icing sugar)
Recommended cake tin- approx. size 6 – 7 inch
