Healthier (low fat & sugar) Muffins

Another recipe for muffins -but this time one low in fat and sugar with the added bonus of some fibre, dried fruit, banana protein and vitamin enhanced carrots.

Preparation time: 15 minutes   Quantity: Serves 12   Cooking time: 20-25 minutes

Ingredients

100g/ 4 oz self raising flour
100g/ 4 oz self raising wholemeal flour
1/2 teaspoon ground cinnamon
1/4 teaspoon mixed spice
50g/ 2 oz light brown sugar
1 banana-diced
1 carrot-grated
250 ml skimmed milk
1 large egg
25g/ 1 oz low fat margarine-melted
50g/ 2 oz sultanas
50g/ 2 oz chopped brazil nuts
50g/ 2 oz muesli

Method

  • Sift the flours and spice, twice to lighten it- put the bits back in
  • Add the sugar
  • Add the carrots, and banana
  • Beat in the milk, eggs and butter

(don’t overwork the flour/ once mixed leave)

  • Mix in the nuts, sultanas and muesli
  • Spoon in to cases
  • Bake in a preset oven gas 6/200*c/400*f -for 20-25 minutes
