Easy Apple Cake / Slice
Cake recipes can’t get simpler, measure, sift, beat and bake. For added adult flavour drizzle with 1 tablespoon calvados after cooking.
Allergy Info - Replace the egg with 1/2 teaspoon baking powder and 1 teaspoon bicarbonate of soda.
Vegan Info - follow the above and replace the milk with soya or rice milk.

Ingredients
250 g / 10 oz plain flour
2 teaspoons baking powder
1 level teaspoon of favourite spice (cinnamon, all spice, ginger or a mix)
200 g / 8 oz caster or light brown sugar
2 apples - peeled and grated
60 ml / 4 tablespoons vegetable oil or melted butter
60 ml / 4 tablespoons any milk
1 large egg
1 lemon - zest and juice (or orange or lime)
2 teaspoons any sugar to sprinkle on top

Oven Temperature - gas 6 / 180*c / 390*f
Cake Tin Size - 11/12 inch x 6/7 inch tray or 8 inch spring bottom
Method
- Simply sift the flour, baking powder and spice in to a large bowl
- Beat in all the other ingredients
- Spoon in to a greased tin
- Sprinkle the top with the extra sugar
- Bake in a preheated oven gas 6 for 25 - 30 minutes or until cooked (a skewer will come out clean from the centre)
- Cool a little before removing from the tin
