Heathy Fat Free Soft Apple Cookies - Lactose Free
These cook up across between biscuits and cake - soft, light and spongy in the middle. Sort of a healthy biscuit (no biscuit is really healthy) with no butter and no sugar, with surprisingly good outcomes. So no need to feel too guilty.
Preparation time: 15 minutes Quantity: Makes 12 small cookies Cooking time: 14 minutes
Ingredients
90 g / 3 oz apples - peeled and cored - chopped small
90 g / 3 oz dates or prunes - chopped small
60 g / 2 oz raisins or sultanas
200 ml / 7fl oz water
90 g / 3 oz plain flour
30 g / 1 oz wholemeal flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
2 eggs - small or medium
1 tablespoon maple syrup - optional
Variations -
Use all plain or 50/50 wholemeal and plain
Use honey instead of maple or leave un-sweetened
Use milk instead of water
Method
- Place the chopped apple, dates, raisins and water in a saucepan
- Simmer for 4 - 5 minutes, to soften
- Meanwhile sift the flours, BP and cinnamon together
- Beat the apple mix in to the flour mix
- Then beat in the eggs and maple syrup (op) to form a lumpy, sloshy dough
- Place tablespoons of mix on to a greased tray, leaving enough room in-between each for growth
- Bake in a preheated oven gas 5 / 180*c / 350*f - for 8 - 10 minutes
