Basic Muffins II
Try lemon dohnut muffins by adding 1 table spoon of lemon curd to the basic mix and 1 teaspoon in the middle of each muffin before baking, try raspberry jam for the same dohnuty taste. You can add just about anything – dried fruits, fresh fruits, berries, frozen fruits, spice, chocolate, espresso, citrus, glace fruits or even lavender.

Ingredients
400g self raising flour
100g butter
220g caster sugar
300ml/10floz/1/2 pint full fat milk
1 large egg
flavour of choice
Method
- Sift the flour twice
- Rub in the butter
- Mix in the sugar, milk and the egg
- Spoon in to muffin cases set in a muffin tin
- Bake in a pre set oven
- Gas 6/210/420 –till cooked
- Firm to the touch/ a knife will come out clean/ golden brown
