White Chocolate Chip and Toffee Cookies

Why buy them when you can make your own, cheaper and tastier.

Preparation time: 20 minutes   Quantity: Makes 10-16   Cooking time: 12-14 minutes

Ingredients

100g/ 4 oz butter
100g/ 4 oz light brown sugar
1 medium egg
150g/ 5 oz plain flour
1/4 teaspoon bicarbonate of soda
75g/ 3 oz white chocolate chips
75g/ 3 oz chopped toffees

Method

  • Cream the butter and sugar together till soften, lighter and well incorporated
  • Beat in the egg, pour in slowly beat vigourously
  • Mix in the rest of the ingredients
  • Make a fat sausage shape in a rectangle of cling film
  • Rest in the fridge till needed
  • Cut of 1/2 inch slices-cook on a tray in a preheated oven Gas 4/180*c - for 12 minutes or so till golden
