Chocolate, Coconut and Mango Muffins
These are adaptable little things try replacing the coconut with ground almonds and the mango with your favourite dried berries, I like dried wild strawberries or fresh blueberries.
There even nicer coated in chocolate ganache.
Preparation time: 15 - 20 minutes Quantity: Makes 8 large or 12 small Cooking time: 20 minutes
Ingredients
125 g / 5 oz / 1/2 packet butter - softened
2 large / medium eggs - beaten
125 g / 5 oz self raising flour - sifted
30 g / 1 oz cocoa powder - sifted
30 g / 1 oz desiccated or shredded coconut
30 g / 1 oz dried mango - chopped small
2 - 3 tablespoons any milk
Method
- Cream the butter and sugar together until smooth, creamy, paler and soft
- Beat the eggs in a little at a time, until well mixed and smooth
- Fold in the flour, cocoa and coconut
- Mix in everything else
- Spoon in to muffin cases set in a muffin or Yorkshire pudding tin
- Bake in a preheated oven gas 4 / 180*c/ *f - for 18 - 20 minutes or until cooked (test by prodding with a knife or skewer - when it comes out clean it’s cooked)
- Cool
