Coconut and Lime Parfait

Preparation time: 20 - 30 minutes   Quantity: Serves 8   Cooking time: Freezing time

Ingredients

300 ml water
160g / 6 oz caster sugar
3 lime zest

3 egg yolks
3 lime juiced

3 egg whites
1 tablespoons caster sugar

200 ml coconut cream (the thick stuff)

Method

  • Boil the water, sugar and lime zest together for approx. 5 - 8 minutes until reduced and thickened (approx. 200 -230 ml in volume)
  • Cool
  • Whisk the egg yolks and lime juice together till frothy, paler and lighter
  • Whisk the egg white and sugar together till whipped and firm
  • Whisk the sugar syrup in to the egg yolk mix
  • Whisk 1/4 of the meringue in to the egg yolk and syrup mix
  • Then fold in the remainder meringue, being very careful not not loose any air and lightness
  • Fold in the coconut milk

Spoon in to a loaf tin lined with cling film (or other suitable dish)

  • Freeze for at least 4 hours or until set
  • Cut slices of with a hot knife and serve frozen
