Brown Bread Ice-Cream

A classic ice-cream perfect served with warmed cherry’s or an English Custard Tart.

Preparation time: 30-40 minutes   Quantity: Serves 5-6   Cooking time: only freezing time

Ingredients

90g/ 3 oz brown bread crumbs
90g / 3 oz dark brown sugar
2 egg yolks
1/2 teaspoon vanilla extract
2 egg whites (from above)
60g/ 2 oz caster sugar
280-300 ml double cream

Method

  • Mix the brown sugar and crumbs together, spread on to a tin
  • Grill for 5 or so minutes till golden brown but not burnt, keep an eye on them

cool

  • Meanwhile separately
  • Whisk the egg yolks with the vanilla
  • Whisk the egg whites with half the sugar till firm
  • Whisk the cream with the remanding sugar till firm
  • Mix everything together gently, beware not to loose any air
  • Spoon in to an ice-cream machine or set in a container in the freezer stirring every 30-40 minutes till smooth and set
