Caramalized Lemon Curd Pot

Another quick and easy recipe from CookeryClub. Variations - replace the lemon curd with other fruit curds or replace the cream with Greek yogurt for a healthier version.

Preparation time: 10 minutes   Quantity: Serves 6   Cooking time: 3-5 minutes

Ingredients

1 pot / 550-600g double cream
250g/ 8 oz lemon curd
6 heaped teaspoons light brown sugar

Method

  • Whisk the cream
  • Fold in the curd
  • Spoon in to 6 ramekins or heat proof pots
  • Sprinkle each one with a heaped teaspoon sugar, covering the whole top
  • Caramalize under the grill or use a blow torch
  • Serve warm or leave to cool (don’t refrigerate -the caramel will loose the hardness)
