Basic Meringues
Remember egg whites have to be pure no shell or yolk in them and whip in a clean bowl.
Use in a mousse or for lemon meringue pie
Preparation time: 10-15 minutes Quantity: as required Cooking time: 2 hours
Ingredients
egg whites
1 teaspoon sugar per egg
Method
- In a clean dry mixing bowl whip up egg whites with a clean dry whisk till nearly stiff
- Add 1 teaspoon of sugar per egg white
- Carry on whipping until stiff and sticks to the whisk.
- Spoon on to a lined tin and bake in a low oven for 2 hours
- For crispy meringues turn off the oven and leave over night.
