Remember egg whites have to be pure no shell or yolk in them and whip in a clean bowl.
Use in a mousse or for lemon meringue pie

Preparation time: 10-15 minutes   Quantity: as required   Cooking time: 2 hours

Ingredients

egg whites
1 teaspoon sugar per egg

Method

  • In a clean dry mixing bowl whip up egg whites with a clean dry whisk till nearly stiff
  • Add 1 teaspoon of sugar per egg white
  • Carry on whipping until stiff and sticks to the whisk.
  • Spoon on to a lined tin and bake in a low oven for 2 hours
  • For crispy meringues turn off the oven and leave over night.
