Basic Baked Cheesecake
This is one of CookeryClubs basic recipes- so you can add the flavour and tastes you like.
Try pear and ginger, kirsch cherry’s or even lavender - or just leave it plain and serve with a good sauce.
Preparation time: 30 minutes Quantity: Serves 6 - 8 Cooking time: 30-40 minutes
Ingredients
For the Base -
12 digestive biscuits-crushed
90g/ 3 oz butter
For the Filling -
250g/ 8 oz cream cheese
2 tablespoon caster sugar
5 tablespoons cream - double or whipping
1 large egg
1 large egg yolk
1 teaspoon vanilla extract
Method
- Melt the butter and add the crushed biscuits -stir till well coated with the butter
- Push the crumbs down firmly -in to a greased spring bottom tin
- Beat the cream cheese with the sugar
- Beat in everything else
- Spoon in to the biscuit base
- Bake in a preheated oven for gas 6/200*c for 30-40 minutes or until set in the middle
