Fig Ice-Cream
Preparation time: 20 minutes plus freezing time Quantity: Serves 4 Cooking time: no cooking required
Ingredients
5-6 fresh figs –pureed/ whizzed/finely chopped/squashed- etc.
(or you could try dried - soaked for an hour in a little rum)
3 oz /75g demerara sugar
½ fresh squeezed lemon juice
1 x 284 ml whipping cream –whipped
Method
- Puree the figs with the sugar
- Mix in the lemon juice and fold the cream in gently
- Spoon in to an ice-cream machine or freeze in a shallow container stirring every 30 minutes till ice-creamed!!
