Sorbet is so refreshing and surprisingly easy to make-plus you can use up excess fruits in the house. Citrus sorbets go well as a pre main cleanser as part of a dinner party - even adding champagne or dry wine. Fruit Sorbets excel as a great light dessert after a heavy meal -served with a biscuit and a few berries.

Preparation time: 10 minutes plus setting time   Quantity: Serves 8   Cooking time: 10 minutes

Ingredients

1 pint/ 550 ml water
450g/ 16 oz caster sugar
450g/ 16 oz fruit puree
25g/ 1 oz glucose syrup

Method

  • Bring the water and sugar to the boil
  • Simmer for 2-3 minutes
  • Stir in the glucose syrup
  • Cool
  • Stir in the fruit puree
  • Add to an ice-cream machine or freeze in a shallow bowl, stirring every 30 minutes till set- approx 3 hours
