A delightful refreshing sorbet - replace the Blueberry’s with any soft fruit you like.

Preparation time: 10 minutes   Quantity: Serves 4   Cooking time: cooling and chiling time.

Ingredients

100g/ 4 oz caster sugar
150 ml/1/4 pint water
1/2 teaspoon vanilla extract
550g/ 16 oz blueberrys

Method

  • Boil the sugar and water, until the sugar is dissolved
  • Simmer for 2-3 minutes, add the vanilla.

cool

  • Puree the blueberry’s and add to the sugar syrup
  • Place in an ice-cream machine or freeze, mixing every 30 minutes or so
