Caramelized Sweet Potatoes

As strange as the concept sounds these are eaten as a Japanese dessert.

Preparation time: 10 minutes   Quantity: serves 4   Cooking time: 12 - 14 minutes

Ingredients

450 g / 1 lb. sweet potatoes – peeled
2 –3 tablespoons vegetable oil
120 g / 4 oz caster sugar
1 tablespoon golden syrup or honey or Mizu-ame / Japanese syrup
50 ml / 3 – 4 tablespoons water
pinch black sesame seeds

Method

  • Cut the potatoes in to wedges and soak in cold water for 10 minutes or so.
  • Drain the potatoes and pat with a clean t-towel.
  • Heat up the oil and fry of the potatoes until golden, turn down the heat and cook until the potatoes are tender.
  • Remove and set aside.
  • Wipe the pan and reheat with the sugar, syrup and water.
  • Boil until caramelised / golden brown and bubbling.
  • Add the potatoes and toss round until well coated.
  • Serve with a sprinkling of black sesame seeds
