Aubergine Caviar

A poor mans Caviar and in my opinion a lot tastier, sorry the real macoy not for everyone. Serve with toasted flat bread or warm fresh granary bread and butter

Preparation time: 10 minutes   Quantity: Serves 4   Cooking time: 20 minutes

Ingredients

1 aubergine
2 plum tomatoes - skinned and chopped
1 tablespoon olive oil
1 onion - finely chopped
1 clove garlic - crushed
4 tablespoons water or white wine
seasoning

Method

  • Cut the aubergines in half length wise
  • Grill the black side for 5 minutes till charred
  • Peel of the skin
  • Chop the aubergine flesh in to small pieces
  • Heat the oil in a pan
  • Gently fry of the onion cooking till soft but without colour
  • Add the garlic and aubergine
  • Cook for approx. 5 minutes till soft
  • Add the tomatoes and water
  • Cook till all the water has absorbed, the mix is soft and paste like
  • Season to taste
  • Cool and serve
