Basic Cheese Sauce

An all in one method white sauce with the addition of cheese. For a basic cheese sauce for a lasagna or pasta bake use a good cheddar or make a stilton sauce or brie sauce or smoked cheese sauce, add herbs to compliment the cheese like cream cheese and chives or smoked applewood and thyme or brie and fennel etc.

Preparation time: 5 minutes   Quantity: 1 pint / 550 ml   Cooking time: 10 - 12 minutes

Ingredients

1 pint milk
2 oz / 60g butter
2 oz / 60g plain flour
tip tsp mustard
seasoning
2 - 3 oz / 60 - 90g any cheese - grated or crumbled

Method

  • Add everything except the cheese, in a saucepan
  • Simmer for 10 - 12 minutes stirring occasionally
  • Stir till thickened
  • Liquidize or pass through a sieve
  • Stir in the cheese, simmer to warm
  • Season to taste
  • If too thick, thin down with a little more milk

and for a thinner sauce add less milk
