Coconut Sambal
This dip goes perfectly with Popodums, served before an Indian meal, possibly with some sliced up onion, cucumber and coriander.
Popodums can be grilled, deep fried, micro waved or shallow wok fried.
You can sometimes get them in small rounds, good for parties!!!
Preparation time: 15 minutes Quantity: Makes 1 jar Cooking time: 2 minutes
Ingredients
2 teaspoons oil
1 teaspoons mustard seeds
½ -1 green chilli diced
½ tsp cumin seeds
½ tsp coriander seeds
80g/ 3 oz of fresh grated coconut
4 tablespoons fresh chopped coriander
Method
- Pan fry for 2 minutes the mustard seeds, chilli, cumin seeds and coriander seeds until popping (in a dry pan)
- Grind and add to coconut and coriander
