Try this dip with crumbled feta mashed in or try lime instead of lemon or spoon in a couple of tablespoons of grated parmesan. Serve with a panfried piece of fish or with grilled crispy flat breads and a bean salad.

Preparation time: 10 -15 minutes   Quantity: Serves 6   Cooking time: 10 minutes

Ingredients

2 tablespoons olive oil
2 cloves garlic - crushed
200g/ 8 oz courgettes -small dice
1/2 fresh lemon juice
seasoning

Method

  • Heat the oil in a frying pan
  • Add the garlic and cook gently for half a minute
  • Add the courgettes
  • Cook till golden brown and soft, mix a tablespoon of water in after a few minutes to help them soften
  • Take of the heat
  • Mash
  • Add the juice and season to taste
