Lime Butter Sauce

A zesty creamy smooth sauce to serve with fish or seafood or even fresh raviolis

Preparation time: 20 minutes   Quantity: Serves 3-4   Cooking time: 10 minutes

Ingredients

1 small onion- finely diced
30 ml white wine vinegar
2 tablespoons water
60 ml white wine
1 lime zest and juice
50 ml double cream
125g/4&1/2 oz butter -diced chilled

Method

  • Bring the onion, wine vinegar, wine, water and lime zest (zest only) to the boil, boil till reduced to 20-30%
  • Add the cream
  • Bring to the boil for a few seconds
  • Take aside
  • Whisk in the butter cubes, one at a time till well mixed in
  • Repeat until all the butter has been dissolved and the sauce creamy and smooth
  • Squeeze over the lime, stir and serve
