Caesar Salad Dressing
One of the best dressings,and even better made fresh. It doesn’t have to be saved for Caesar salad (see CookeryClubs recipe) - it goes great with all sorts of salads, grilled chicken or even stuffed turkey.
Preparation time: 15-20 minutes Quantity: Makes 140g or so
Ingredients
1/4 teaspoon salt or less
2 medium free-range eggs
Pinch caster sugar (optional)
1/2 level teaspoon dry mustard or Colmans yellow
2 teaspoon fresh lemon juice
1 teaspoon grated Parmesan cheese (optional)
1-2 cloves crushed/ minced garlic
2 teaspoon white wine vinegar
2- 4 tablespoon virgin/ olive oil
3 drops Worcestershire sauce (optional)
Method
- Mix in blender and refrigerate
- Or “make by hand” - whisk eggs, add all but olive oil – whisk till pale and frothy
- Slowly pour in the olive oil
- Season and taste
