Use as a dip, sauce or as a base for mousses and whips by adding whipped up cream

Preparation time: 10 minutes   Quantity: Makes a 450g batch  

Ingredients

450g/ 1 lb of fresh or frozen mixed or single berries
2 tablespoons honey or maple syrup
( or 1 - 2 tablespoons caster sugar)

Method

  • Puree, liquidise or mash the fruit together with the honey or maple syrup or caster sugar
  • The other method is to cook the puree with the sugar, this lasts a little longer , is a little darker and is richer in taste
