Garam Masala
Garam Masala is usually used to finish of an Indian curry dish, by simply sprinkling on the top. See CookeryClubs Lentil Dhal recipe.
Preparation time: 5 minutes Quantity: makes a 30g batch
Ingredients
1/2 tsp cumin seeds
1/2 teaspoon coriander seeds
4 whole cardamon seeds
1/2 teaspoon black peppercorns
1/2 teaspoon cloves
1 whole mace (or 1/4 teaspoon)
1/2 cinnamon stick
Method
- Grind in a blender or pestle and morter – keep fresh for a few months
